Chocolate Chip Cookies

Since the Chinese New Year period is coming and we are all alone in this big country, I had nothing better to do but to bake some basic Chocolate Chip Cookies. There's no symbolic meaning to baking these cookies because I'm actually pretty bad in Chinese/Mandarin so any auspicious jargon that I think of would sound real bad. But here's a recipe to keep you all occupied during the holiday period :-)
This is a very simple recipe given to me from my mum and it's probably 99.8% fool-proof. In other words, this recipe hardly fails and it's probably the only one I'll ever use to make Choc chip cookies :-) So if you like, you can try it out and then post pictures of these gorgeous little goodness!

So here goes!

Ingredients:

227g unsalted butter
288g all-purpose flour (plain flour)
150g caster sugar
150g (caster) brown sugar
1 teaspoon baking powder
1 teaspoon vanilla extract/essence
1/2 teaspoon salt
1 egg
2 cups dark chocolate chips (or as much/less as you want!)

Note: if you used salted butter instead of unsalted, you can minimise the salt or add no salt at all // Reduce the amount of sugar according to your preference.

Directions:

- Melt unsalted butter in a pan/pot. leave to cool. Preheat oven to 190 degrees Celsius.
- Sieve flour, baking powder and salt into a large bowl. Mix the dry ingredients thoroughly. Set aside.

- Crack the egg and beat lightly in a small bowl, mixing the vanilla extract. Set aside.

- Once butter is cooled, pour it into a electric mixer and beat for 3 minutes. 

- Add both sugars into melted butter and cream the mixture till its light brown in colour (probably 4-5 minutes).

- Gradually add the egg and vanilla extract mixture into the mixer and beat till it has been incorporated.

- Add flour mixture (flour, baking powder, salt) in 3 parts. Blend each part of the flour into the mixture, making sure that it is well blended before adding the other 2 parts carefully.

- Finally add your large bowl of chocolate chips and blend well. Your cookie dough is formed :-)

- Spoon the cookie dough onto baking trays lined with baking sheets (or you can grease the trays with butter or vegetable oil) and bake in the oven for approximately 8-10 minutes. The size of your cookies is entirely dependent on individual preference :-)

- Once cookies turn golden brown in the oven, remove and cool onto a cooling rack. Leave it to cool completely before tasting. Cookies need time to harden up. Enjoy!

This recipe is entirely written from my (pathetic) brain because there was only the ingredients and temperature written on the small piece of paper by my mum. Sorry about that.
